Who it's for
Explore wine: key grape varieties and regions, service and pairings for bartending, through a 12-hour introductory course in Siena.
What you'll learn
Session 1
We will begin by introducing the history of wine across the centuries and cultures, its global spread, and how socio-economic and cultural changes have shaped it over time. We will also examine the life cycle of the grape, following the vine’s annual stages in the vineyard through to choosing the harvest date. At that point, we will explore the variables that determine when to pick the grapes and the implications of that decision for the final product. We will begin looking at wine production, from crushing and maceration through to an introduction to fermentation. At the end, we will taste: 1 young red wine, 1 young white wine, 1 young natural white wine, 1 rosé wine.
Session 2
We will revisit fermentation processes in greater depth, also touching on the role of malolactic fermentation. We will examine the main vessels used to mature wine and how they affect its sensory profile. We will also cover the differences between types of sparkling wine, examining the differences between the Martinotti method and the méthode champenoise. At the end, we will taste: 1 Martinotti-method sparkling wine, 1 traditional-method sparkling wine, 1 wine aged in stainless steel, 1 wine aged in wooden barrels.
Session 3
We will introduce wine tasting: visual assessment, aroma, and flavour and aroma together, focusing on the chemical processes that take place in the nose and mouth and how to interpret them using a universal language. At the end, we will taste: 1 light-bodied wine, 1 full-bodied wine, 1 old wine, an old sparkling wine.
Session 4
In this session, we will introduce different types of sweet wines, fortified wines and dessert wines. We will also examine the legal framework and the classifications of the IGT, DOC and DOCG certifications. At the end, we will taste: 1 vin santo, 1 passito, 1 port, 1 sherry.
