What you'll learn
Session 1
We will introduce the history of beer, its uses and the differences in consumption from ancient civilisations to the present day, exploring the cultural differences, changes and technological discoveries that have led to today’s styles and methods of modern beer production. We will also cover some stages of beer production, starting with grain selection, malting, mashing and wort boiling, followed by a brief introduction to fermentation. At the end, we will taste: 1 lager, 1 unfiltered beer, 1 strong beer, 1 witbier.
Session 2
We will revisit fermentation in greater depth and explore its different characteristics, focusing on the differences between top and bottom fermentation and the types of beer they produce. We will also cover the subsequent stages through to the different types of conditioning, pasteurisation and maturation, bringing together all the points examined in the previous lesson to give a clear, coherent understanding of the topics covered. At the end, we will taste: 1 India pale ale, 1 American pale ale, 1 stout, 1 pilsner.
